RECIPE| INGREDIENTS LIST:

✔SUKUMAWIKI & MINCE MEAT STIRY FRY
Serves 3

⦿250G Mince Meat (beef)
⦿10 Stalks Sukumawiki (Collard Greens) _ Kale can be used too.
⦿2 carrots (shredded)
⦿1 onion ( thinly sliced)
⦿1 green capsicum
⦿1 yellow capsicum
⦿1 red capsicum
⦿1 tsp ginger (finely grated)
⦿1 tbsp garlic (finely grated)
⦿3 tbsp soy sauce
⦿3 tbsp oyster sauce
⦿small bunch of dhania ( chopped)

✔OVEN BAKED FISH FILLET WITH MANGO SALAD
Serves 2:

500G Fish Fillet ( Red snapper)

Mango Salad:
1 large ripe mango
1/4 onion
2 medium sized cucumbers
1 tbsp fresh parsley ( chopped)
1 medium lemon (juice)
*pinch of chilli powder
*pinch of salt (optional)

Mint and Yoghurt Dip:
Handful of Mint leaves
4 tbsp Natural yoghurt

✔GITHERI & PAPRIKA CHICKEN SALAD WITH DHANIA DRESSING
Serves 3:
⦿1 cup boiled maize (200g)
⦿1 cup boiled beans (200g)
⦿2 tomatoes (chopped flesh removed)
⦿1 cup lettuce (shredded)
⦿1/2 onion (chopped)
⦿1 Green capsicum
⦿1/2 red capsicum
⦿1/2 yellow capsicum
⦿2 tbsp dhania

For the chicken Breasts:
⦿2 chicken breasts (split into half)
⦿2 tbsp olive oil
⦿1 tbsp paprika
⦿1 heaped tsp Oregano
⦿Salt to taste
⦿Black pepper to taste

Dhania Yoghurt Dressing
⦿small bunch dhania (cilantro)
⦿1/2 cup yoghurt
⦿1/2 lemon (juice)
⦿pinch salt
⦿pinch of black pepper
