Eggs banana Muffins, This recipe is always hit among my toddler and his friends. I have made this muffin recipe so many times for them and it never went wrong. This muffins are super healthy and delicious.
For this muffins recipe, use the ripest banana for the sweetness. Customize with some nuts or nut butter and some berries of your choice. I always use nuts powder, so my little one can eat it too.
By following this recipe you can make 18 muffins.
Ingredients-
– 2 ripe banana
– 1 1/2 cups quick Oats or old fashioned Oats
– 1 cup milk
– 3 eggs
– 1/2 cup butter
– 1/4 cup sugar
– 4 tbsp of nuts powder (optional)
– 1 1/2 tsp Baking powder
Let’s make it-
– We will start of preparing some steps.
– First, measure the oats and grind it.
– now, preheat the oven for 375 F
– Lined the muffin pan with cupcakes liner or if you don’t have cupcakes liner then simply apply some butter and then sprinkle some dry flour on the muffin pan.
– Now, time to make the batter. In a large mixing bowl, add the ripe banana and mash them with the help of fork or potato masher.
– add eggs and beat vigorously for about a minute.
– And then add rest of ingredients, milk, butter, sugar, nuts powder, and baking powder. Mix everything well.
– Now, Add the oats powder. Mix it well.
– Now, take the prepared muffin pan. Add the batter in each section.
– Bake the muffins on 375 F for 30 minutes.
– our muffins are ready. Insert the toothpick to check the muffin. If the toothpick comes out dry that means it’s done.
– let the muffins cool down completely at room temperature before serving them.
This muffins can be store in the refrigerator for a week. It is a great breakfast or evening snack for kids.
After taking out from the refrigerator if you want to have it little warm then just microwave it for 10 seconds.
