Karela Gosht is a popular Pakistani and Indian dish made with bitter gourd (karela) and meat (gosht). Here is a recipe for Karela Gosht:
Ingredients:
• 1/2 kg mutton or beef, cut into small pieces
• 3-4 karela (bitter gourd), sliced and deseeded
• 2 onions, finely chopped
• 2-3 tomatoes, finely chopped
• 2-3 green chilies, finely chopped
• 1 tablespoon ginger-garlic paste
• 1 teaspoon turmeric powder
• 1 teaspoon cumin powder
• 1 teaspoon coriander powder
• 1 teaspoon red chili powder
• 1/2 teaspoon garam masala powder
• Salt to taste
• Oil for cooking
Instructions:
• Heat oil in a pressure cooker and sauté the onions until they turn golden brown.
• Add ginger-garlic paste and sauté for another minute.
• Add the meat and sauté until it turns brown.
• Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt to the pressure cooker. Mix well and sauté for a few minutes.
• Add chopped tomatoes and green chilies to the pressure cooker and mix well.
• Add enough water to cover the meat and close the pressure cooker lid. Cook on high heat until the first whistle and then reduce the heat to low and cook for 15-20 minutes.
• Meanwhile, heat oil in a separate pan and sauté the karela until they are slightly browned. Keep aside.
• Once the pressure cooker has released pressure naturally, open the lid and add the sautéed karela and garam masala powder. Mix well.
• Cook the karela gosht on medium heat until the gravy thickens and the karela are cooked.
• Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
