Ingredients
Eggplant half kg
Oil 3 Tbsp
Onions 2
Tomato 3-4
Green chili 3-4
Salt to taste
Tamarind pulp 1 tbsp
Snack Spice 1 tsp
Red chili powder 1 Tbsp
Turmeric half tsp
Niggela seed/kalonji half tsp
Fenugreek seed/Methi Dana half tsp
Cumin powder/zeera 2 tsp
Corriander seeds/ dhaniya half tsp
Mustard seeds /Rai dana half tsp

Method:
Add oil inin a Pan, once it heated add onion slices and cook till it caramelized.
Now add all whole spices and cook for 3-4 min
Now add tomato paste and remaining spices and cook for 5-6 min
Add egg plant and cook on low flame for 10-12 min
once your egg plant tenderized add snack spice and green chilies to it.
Finally add tamarind pulp and cook for 5 min more.

Serve it with Rice or Bread of your Choice. I prefer to eat it with one bread or 6 spoons boiled brown rice.
