PINWHEEL SANDWICHES

Pin wheel sandwiches are quick to make, and children would love the shape. It is a good snack for the lunch box, or guests and is quite wholesome. I used to make it for my daughters birthday parties. Here we go.

Ingredients:

sandwich loaf -three slices.
butter -75 grams.
green chutney.
Butter paper or a neat thin napkin

Ingredients for chutney filling.,

coconut -1/4 cup.
coriander leaves half bunch.
raisins -5 .
garlic -3 flakes .
peanuts -1 tablespoon .
cashew nuts – 1 tablespoon
ginger a small piece
green chillies 2-3
jeera – 1 tsp,
salt and lime juice to taste.

Method
Clean, wash and chop the coriander leaves, scrape the coconut and chop the ginger, garlic, green chillies and peanuts. Grind the ingredients to a fine paste with little water, and lime juice to taste . Remove the crust and place a slice of bread on a damp cloth, but not a wet cloth. Roll the bread in it and keep in the fridge for about 15 mins. Unroll the bread, spread butter and chutney. Re-roll the bread tightly, and wrap it in a grease proof paper or butter paper and keep it in the fridge for half an hour. Unwrap the paper and slice the roll . Serve in a plate with carrot and tomatoes slices. Children will enjoy the sandwiches. A good lunch box snack too.
