Grilled Chicken with Roasted Sweet Potatoes and Broccoli

Ingredients:
– 2 boneless, skinless chicken breasts
– 2 medium sweet potatoes, peeled and diced
– 1 head of broccoli, chopped into florets
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper, to taste

Instructions:

1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix together diced sweet potatoes, 1 tablespoon olive oil, garlic powder, paprika, salt, and pepper.
3. Spread the sweet potato mixture onto a baking sheet and roast in the oven for 25-30 minutes, or until tender and lightly browned.
4. Meanwhile, heat a grill pan over medium-high heat.
5. Brush the chicken breasts with the remaining tablespoon of olive oil and season with salt and pepper.
6. Grill the chicken for 6-8 minutes per side, or until cooked through.
7. In the last 5 minutes of cooking, add the broccoli florets to the pan with the chicken to grill.
8. Serve the grilled chicken with the roasted sweet potatoes and grilled broccoli on the side.
