Salad Recipe
2 red bell peppers (I use yellow, and red) chopped
1/2 small red cabbage chopped
1 cucumber chopped
5 green onions chopped
1 bunch of cilantro chopped
2 cups cooked lentils
Dressing
1/2 cup water
1/2 cup peanut butter or tahini butter
1/4 cup coconut aminos (if you are avoiding soy) or tamari
1 tbsp maple syrup
2 lime juiced
4 garlic cloves minced
1-2 inch ginger minced
Salt to taste
