For the filling, we need 3 cups of grated cauliflower, 3/4 cup finely chopped onion, 1/4 cup coriander leaves (cilantro), 1 tbsp garam masala, 1 tsp turmeric powder (optional), 1/2 -1 tsp salt. Heat 1 tbsp olive oil, add onion, cilantro, grated cauliflower, turmeric powder (optional), Garam masala and salt. Mix well and cook for 5 to 8 minutes (do not cover).Let us make dough now ( I am using multigrain flour).For the dough, I used 3 cups of multigrain flour (you can use wheat flour), 1 tbsp Ajwain seeds or അയമോദകം (optional), 1/2 tsp salt and 1.5 to 1.75 cups of water. Knead it using hand until you get a smooth dough and let it rest for at least 10 minutes (put a wet towel to cover). Make bigger balls like in the video (I made 10 parathas with this measurements). Roll it into small circle, place 1 tbsp stuffing, close the circle, press it gently and roll it gently into parathas. Cook the parathas on a pan. Apply ghee or butter or olive oil and cook both sides. Serve hot with Curd (yogurt) and pickle. Any kind of Raita will go with this.For Boondi Raita, Mix 1/4 tsp salt, 1 tsp cumin powder, 1 tsp sugar, 1/2 tsp chilly powder or finely chopped green chillies (optional), 1/2 cup chopped coriander or cilantro leaves to 2 cups of yogurt. Add Boondi (Indian store) just before you serve the raita (to avoid soggy Boondi) “Ajwain seeds are rich in fiber, minerals, vitamins and antioxidants.They can even be chewed raw, added to water or tea to extract maximum benefits from them,” says Dr. Sinha. Besides this, it acts as a great mouthwash and maintains good oral hygiene.A component called thymol in ajwain seeds acts as a strong fungicide and germicide. Thus, ajwain seeds can be crushed and applied on the skin to treat infections or cuts. So if next time you come across any such injury, bring carom seeds to your rescue.Ajwain water is an ayurvedic marvel, especially for women. It cures the problem of indigestion for pregnant ladies by cleaning the uterus and stomach and solves the issue of irregular periods. Oma water is given to babies to reduce the problem of gas that causes discomfort. To prepare ajwain water, boil 2 teaspoons of roasted ajwain seeds in water. Strain this mixture and drink. You can add 1 teaspoon of honey for flavour. Drinking ajwain water regularly is known to enhance your rate of metabolism, burns fat and thus helps in losing weight.Ajwain seeds help in halting premature greying of hair. To prepare this mixture, add curry leaves, dry grapes, sugar and carom seeds in a single cup of water and cook. Drink one glass of this every day until you start seeing the results. Using this spice as a repellent fills your house with a beautiful scent unlike the fumes released from coils.Ajwain powder is especially useful in lightening acne scars. Apply a paste on the affected area for 10-15 minutes and then rinse. This will help for getting rid of dirt from the skin.Ajwain seeds possess two qualities that help them fight arthritis. They have antibiotic properties that reduce redness and combat inflammation, and they possess anaesthetic properties that soothe the pain and swelling. You can apply the paste of crushed seeds on the joints or soak in a tub of hot water with a handful of carom seeds.
