Healthy vegetable side dishes to accompany with any main dishes. Mushroom carpaccio is also great to pair with wine and Sake. Kiriboshi-daikon salad is really healthy as it contains various vegs and you can keep it for several days. I prepare these two dishes quite often for dinners with friends as well as for daily meals. They are good for those who are on diet as well!!

Ingredients
4 servings
15g Dried Japanese radish
70g cucumber
60g carrot
5 radishes
50g cured ham
1 tablespoon Dashi-shoyu
1/2 tablespoon white wine vinegar
1 tablespoon mayonnaise
2 tablespoon Greek yoghurt
1 tablespoon grated sesame (or more if you like)
Pepper, salt
Mushroom carpaccio

3 mushrooms
Parmesan cheese as much as you like
1/4 lemon
20ml olive oil
Salt、pepper
Chopped parsley (optional)
