1 potato, diced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 cup baby corn
1 cup cauliflower florets
2 cloves garlic, minced
1 tsp olive oil

Method:
Heat a cast iron pan over medium-high heat.
Add olive oil to the pan and let it heat up.
Add diced potato to the pan and cook for 2-3 minutes until lightly browned.
Add sliced bell peppers, onion, baby corn, and cauliflower to the pan and cook for 5-7 minutes until vegetables are tender.
Add minced garlic to the pan and cook for an additional 1-2 minutes.
Season with salt and pepper to taste.
Serve hot with a squeeze of fresh lemon juice.
