Here are the easy steps for this recipe:

slice the eggplant
in a baking dish
Bake at 180℃/360℉ for 10 minutes
onion cut into pieces
green pepper cut into pieces
olive oil
Saute the onions for 2 minutes
Fry green peppers for 2 minutes
tomatoes cut into chunks
fry for 2 minutes
Salt
pepper
fry for another 1 minute
the eggplant is ready
cool down
chopped parsley/cilantro
Salt
pepper
olive oil
garlic
Arrange the eggplant on the bottom of the plate
parsley/cilantro for topping
add sautéed vegetables
