This Chilli Salmon with Mushroom, Pineapple and Garlic rice is so easy to make and is perfect if you are looking to lose weight or want a low calorie meal as it’s only 500 calories and packs 30g of protein!

Ingredients

1 Salmon Fillet (100g)
75g Basmati rice (uncooked)
100g Mushrooms
100g Pineapple
Chilli flakes
Lemon juice
Low calorie spray
Salt
Pepper
Garlic powder
Parsley

Recipe

1. Start off by boiling the rice
2. While the rice is boiling, add chilli flakes and lemon juice to salmon and fry with low calorie spray until cooked on both sides and set to side
3. In the same pan, add more low calorie spray, mushrooms and pineapple and cook through.
4. Add the cooked rice, parsley, salt, pepper and garlic powder
5. Serve and enjoiy
