Blueberry Ginger Bran Muffins
Hand mixed Muffin Batter
Ingredients
2 1/2 Cups All Purpose flour
1 cup bran flakes
1 1/3 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon ginger powder
2 extra large eggs
2/3 cup brown sugar
3/4 cup vegetable oil (I used extra virgin olive oil)
1/2 cup milk
1/2 cup Greek yogurt
2 cups pear sauce
1 cup blueberries (save some for topping)
Chopped Nuts optional (can be a choking hazard for little kids)
Turbinado sugar for topping
Method
As in video. Preheat oven to 350F and bake on the middle rack for 20 to 25 minutes or until done, when skewer comes out clean. Cool completely before serving.
Notes
Adjust sugar to taste. I cut back on sugar in the batter and topped it with some turbinado
Sugar. 2/3 of the blueberries were added into the batter and left about one third for topping. You can use buttermilk instead of yoghurt and milk. Cut back on the ginger if it’s not a favourite with your family members but it’s hardly noticeable. I added pear sauce which I prepared from fresh pears in the summer and added it for extra fibre and reduced sugar quantity. Here’s a link for the pear sauce I added a bit of ginger and cinnamon to spice it up a little and reap the health benefits that these spices offer. Hand mixed batter always gives a nicer light and crumbly texture to the muffins rather than using an electric mixer. You may want to omit the paper liners especially for kids snack because the batter sticks to them. I made 12 large muffins and 24 mini muffins for kids lunch boxes. Great as an anytime snack with coffee or tea and or kids lunchboxes.
