Ingredients:
2 cups all-purpose flour
1 teaspoon salt (adjust to taste)
1 teaspoon carom seeds (ajwain)
3 tablespoons oil
Water for kneading
Oil for deep frying
Instructions:
In a large mixing bowl, combine the all-purpose flour, salt, and carom seeds. Mix well to distribute the flavors evenly.
Add 3 tbs oil and mix with the flour with hands until oil evenly distributed in the flour.
Gradually add water to the flour mixture, and knead it into a stiff dough. Ensure that the dough is not too soft or sticky.
Divide the dough into small portions and roll each portion into a thin sheet. You can use a rolling pin to achieve the desired thickness.
Using a sharp knife, cut the rolled dough into diamond-shaped or rectangular pieces, as per your preference.
Heat oil in a deep frying pan or kadhai over medium heat.
Once the oil is hot, carefully drop a few pieces of the cut dough into the oil. Fry them until they turn golden brown and crispy. Make sure to fry them in batches, so they cook evenly.
Once the Namak Para turns golden brown, remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb any excess oil.
Repeat the frying process with the remaining dough portions until all the Namak Para are fried to perfection.
Allow them to cool completely before storing them in an airtight container.
Serve the crispy Namak Para as a delightful snack with a cup of tea or as an accompaniment to your favorite chutneys or dips.
