RECIPE: Blueberry Chia Pudding
INGREDIENTS:
1/2 cup grape juice concentrate
1/2 cup soy milk (or other milk)
1/3 cup chia seeds
4 cups frozen blueberries
INSTRUCTIONS:
1: In a medium saucepan, stir together the grape juice concentrate, milk and chia seeds.
2: Bring mixture to a boil. Stir frequently.
3: Stir in the blueberries.
4: Return the mixture to a boil, then reduce the heat to a simmer.
5: Stir frequently and simmer about 5 – 7 minutes or until about 3/4 or more of the blueberries have reduced down.
6: Chill and serve. Top with whipped cream if desired.
NOTES:
Use another type of milk if desired.
