🗝️ Chicken Parsley Soup is in Laura Calder’s Kitchen Bliss

🗝️ Mediterranean Cod
1 lb cod filets
Extra virgin olive oil
salt and pepper to taste
Handful chopped parsley
1/4 cup roasted red peppers drained
1/4 cup Kalamata olives, seeded
Small handful of cherry tomatoes
Preheat the oven to 400 degrees F. Prepare your fish packet by laying out aluminum foil and parchment paper on a baking tray. Drizzle olive oil on the parchment paper. Place a handful of parsley down. Lay the cod filets on top of the parsley. Drizzle with more olive oil and season with salt and pepper. Top with peppers, olives, cherry tomatoes and more parsley. Wrap the fish into a parcel and bake in the oven for 20 to 25 minutes or until the fish is cooked through. Enjoy!

🗝️ Vegan White Bean Pasta
1/2 red onion, chopped
Large handful of parsley, chopped
Large handful cherry tomatoes
1 Tbs minced garlic
2 tsp chopped thyme
2 cans cannellini beans, drained
1 Tbsp capers
Juice of one lemon
1/4 cup jarred roasted red peppers, drained
1/4 cup Kalamata olives, seeded
3 large handful of spinach
1 Tbsp red wine vinegar
Mediterranean or Italian seasoning
1 box bowtie pasta
Feta cheese for topping (use vegan Feta if you want to keep this vegan)
Cook pasta according to package instructions. Drain and set aside. In a large pan, drizzle olive oil. Sauté the red onion and garlic and thyme for 2 minutes. Add parsley, tomatoes, cannellini beans, capers, lemon juice, red peppers, olives, spinach, vinegar and seasoning. Stir until flavors are combined and spinach is wilted. Add cooked pasta and stir to combine. Serve with feta cheese on top. Enjoy!

Chocolate Salt Smoothie
1 stick pack LMNT Chocolate Salt
1 scoop protein powder
1 handful spinach
1 frozen banana
1/2 avocado
1–2 cups milk of choice
1 tbsp chia seeds
1 tbsp almond butter

Place all ingredients in a blender, blend until smooth, and enjoy.
