Ingredients (yields one 8½“ x 4½” loaf)
1 cup (8 ounces or 227 grams) water, room temperature, divided
⅓ cup (1¾ or 50 grams) quinoa, plus 1 teaspoon to sprinkle on top
1½ cups (8¼ ounces or 234 grams) bread flour (I used King Arthur Flour in this video)
1 cup (5½ ounces or 156 grams) whole-wheat flour
2 tablespoons (½ ounce or 14 grams) flax seeds, plus 1 teaspoon for the top
2 teaspoons (approx 7 grams) instant dry yeast
1½ teaspoons (9 grams) salt
¾ cup (6 ounces or 170 grams) whole milk, room temperature
3 tablespoons (2¼ ounces or 63 grams) honey
1 tablespoons (½ ounce or 14 grams) vegetable oil
1 large egg beaten with 1 tablespoon water and a pinch of salt
Flour to dust work surface
Bake at 350F (175C) for 45-50 minutes (until bread reaches internal temperature of 205-210F (approx 96-99C), rotating pan once halfway through. Cool until temperature drops below 110F (43C).
