This tasty chicken fried rice recipe is an easy and quick meal to make for when you’re in a hurry.

Ingredients (serves 8)
• 2 cups brown rice
• 4 cups water
• 8 eggs, beaten
• 3 tbsp oil
• 1 onion, finely diced
• 1kg/ 8 cups mixed frozen vegetables/ chopped fresh vegetables
• 500g/ 4 cups chopped cooked chicken
• 3 tbsp soy sauce
Method:
1. Rinse the rice under cold running water
2. Combine rice and water and cook in a saucepan with lid or rice cooker
3. For the pot method – bring water to the boil then turn down to low
4. Once water is below the level of the rice, turn the heat off and leave covered for 10 minutes
5. Heat a wok or large frying pan with half of the oil
6. Add beaten egg and cook until lightly scrambled. Remove eggs and roughly chop
7. Add the rest of the oil to the wok and add onion and vegetables. Stir-fry until nearly cooked
8. Add cooked rice and chicken and heat through
9. Add eggs back to the wok with soy sauce and mix thoroughly
