Ingredients:
– 1 ripe avocado
– 2 slices of whole grain bread
– 2 eggs
– Salt and pepper to taste

Instructions:
1. Toast the bread slices until they are golden brown.
2. While the bread is toasting, cut the avocado in half and remove the pit. Scoop out the flesh and mash it in a bowl with a fork.
3. Poach the eggs by bringing a pot of water to a simmer. Crack each egg into a separate small bowl or ramekin. Gently pour the eggs into the simmering water and cook for 3-4 minutes, until the whites are set but the yolks are still runny.
4. Spread the mashed avocado onto the toasted bread slices. Season with salt and pepper to taste.
5. Use a slotted spoon to remove the poached eggs from the water and place one egg on top of each slice of avocado toast.
