Healthy soup recipes are useful for prepping dinners for a whole week. Soups tend to be low in calories and if you are mindful of the amount of protein, they can be high in protein dinners too, just like this fish stock soup recipe.

Ingredients
Leftover fish (snapper) – I used part of a tail, one steak, fish head
14 oz canned san marzano style tomatoes
1 red bell pepper
1 small leek
3 celery stalks
4 garlic cloves
1/2 medium butternut squash
2-3 cups kale
Parsley leaves
Cilantro leaves
SPICES
3 bay leaves
salt and pepper to your taste
1 tbsp sweet paprika
1/2 tsp ground cloves
1 tsp cayenne pepper
1/2 tsp saffron
