Typically what I eat on a regular basis is something like this. It’s great as a healthy dinner, supports my fat loss and keeps me on track with my fitness goals.

This Mexican beef recipe is great for beginners or anyone looking for budget healthy meal ideas either for lunch or dinner.

Ingredients used – 5 portions (Beef only)

1kg Brisket
125g chipotles in adobo sauce (makes it medium spicy)
1 tbsp ground cumin
1 tbsp oregano
1 tbsp salt
5-6 large bay leaves
5 cloves garlic, peeled
2 tbsp white wine vinegar
1 litre water
1/2 white onion
2 tomatoes

Protein 43g
Carbs 5g
Fat 5g
