RECIPES IN THIS VIDEO:
+Sloppy Joe Zucchini Boats
Ingredients:
4 Zucchinis
1 pound of lean ground beef (you can use ground turkey also)
1 packet of sloppy joe seasoning
1 can of tomato paste
½ cup of shredded cheese (pick your favorite, all types work in this recipe)
Frozen corn (or whatever side you prefer)
Directions: Slice the zucchinis in half and use a spoon to scoop out the center. Spray some oil (I used avocado oil) on top and season with pepper and salt. I cooked mine in the air fryer on bake for 5 minutes. You can also bake these in the oven at 375 for about 5 minutes. While those are baking, cook the meat on the stove and follow the seasoning packet instructions (you will add water and tomato paste with the seasoning). Finally, stuff the zucchinis with the sloppy joe mix and top with a sprinkle of cheese. Bake in the oven or air fryer until the cheese melts (about 3-4 minutes). I added corn to the side-it was delicious!
+Teriyaki Salmon Bowls
Ingredients:
Salmon (we had two portions, select as many as your family needs)
G.Hughes sugar free teriyaki sauce
Broccoli
Broccoli slaw mix
Brown Rice
Directions:
Brush about ¼ cup of the sauce on top of the salmon. Cook in the air fryer for about 13 minutes (or bake in the oven). You want the internal temp to reach atleast 145 degrees for it to be safe. Next, saute the broccoli and the slaw mix with about ¼ cup of the sauce. Cook the rice according to the package instructions. Lastly, assemble your bowl! Yum!
+Hash brown Egg Casserole
Recipe:
*Note: I used my favorite chicken sausage from Applegate farms instead of bacon.
+Chicken Tortilla Soup
Ingredients:
2-3 Chicken Breasts
1 bag of frozen corn
1 can of red enchilada sauce
1 carton of chicken broth
1 can of petite diced tomatoes
Cilantro
Optional toppings: tortilla chips, cheese, avocado
Directions: Place all the ingredients in your slow cooker. (except the cilantro) Cook on low for 3-4 hours. Remove the chicken and shred then place it back in the slow cooker. Add several bunches of cilantro and stir. It’s ready now! Add your favorite toppings and enjoy!
