Ingredients
250 g beluga lentils
500 g water
1 tsp salt
3 scallions in 5 cm pieces
½ cucumber, diced
10 cherry tomatoes, sliced
Juice from 1 lime – link
1 small fistful of walnuts
Fresh cilantro
Freshly ground pepper
Sea salt
Boil the lentils for 25 minutes.
Add the scallions and let it simmer for 5 minutes.
Drain and let it cool down a little.
Add the rest of the ingredients except sea salt, some cilantro and some walnuts.
Mix it well and serve.
Finish off with sea salt, cilantro and walnuts.
