2 ripe bananas
1 egg
3g active yeast
28g unsalted butter
80g raisins
3g sugar
350g flour
Instruction:
1. Preheat the oven to 375°F (190°C).
2. Mash the 2 ripe bananas using a blender or fork until smooth in a mixing bowl.
3. Crack and add 1 egg to the mashed bananas.
4. Sprinkle 3g of active yeast over the banana and egg mixture.
5. Microwave 40g of unsalted butter for 20 seconds to soften it, then add it to the bowl.
6. Incorporate 80g of raisins into the mixture.
7. Add 3g of sugar to the bowl.
8. Gradually add 350g of flour to the mixture, stirring well after each addition, until no dry flour particles are visible.
9. Cover the bowl and allow the dough to rise until it doubles in size.
10. Once the dough has risen, deflate the air bubbles by gently pressing down with a spatula.
11. Dust a clean surface or board with flour and place the dough on it.
12. Use your hands to flatten the dough and then divide it into 8 equal pieces.
13. Roll each piece of dough into a ball shape.
14. Place each dough ball into a non-stick baking pan.
15. Cover the pan and let the dough rise for another 45 minutes, or until it doubles in size.
16. Sprinkle some flour over the tops of the dough balls.
17. Place the baking pan in the preheated oven and bake for 15-20 minutes, or until the bread turns golden brown.
18. Once baked, remove the banana bread from the oven and let it cool.
