Chicken Broccoli Soup
Servings – 2- 3
INGREDIENTS
Olive oil – 1 teaspoon
Garlic – 1 teaspoon
Ginger – 1 teaspoon
Onion – 70 grams
Chicken breast – 130 grams
Chicken stock – 200 milliliters
Water – 250 milliliters
Broccoli – 50 grams
Carrot – 65 grams
Celery – 2 tablespoons
Black pepper – 1/8 teaspoon
Salt – 1/8 teaspoon
Oregano – 1/8 teaspoon
Boiled green peas – 60 grams
Parsley – 1 tablespoon
PREPARATION
1. In a pan, heat 1 teaspoon olive oil, add 1 teaspoon garlic, 1 teaspoon
Ginger stir it well.
2. Now add 70 grams chopped onions, fry till translucent or until it turns
golden brown in color.
3. Add 130 grams small pieces chicken breast, stir and cook for 10 minutes.
4. Add 200 milliliters chicken stock, 250 milliliters water, mix it well.
5. Add 50 grams broccoli, 65 grams carrot, 2 tablespoon celery, mix it well
again.
6. Add 1/8 teaspoon black pepper, 1/8 teaspoon salt, 1/8 teaspoon oregano
and mix it well.
7. Cover with lid and cook it for 10-15 minutes.
8. Remove lid and add 60 grams boiled green peas, 1 tablespoon parsley, stir
it well.
9. Cover with lid and cook it for 5-7 minutes.
10. Remove lid and stir it well.
11. Remove from heat and Serve hot.
Vegetable Mushroom Soup
Servings – 2- 3
INGREDIENTS
Olive oil – 1 teaspoon
Garlic – teaspoon
Onion – 70 grams
Vegetable stock – 200 milliliters
Water – 250 milliliters
Mushrooms – 300 grams
Broccoli – 40 grams
Zucchini – 60 grams
Soy sauce – 1 teaspoon
Dried thyme – 1/8 teaspoon
Oregano – 1/8 teaspoon
Salt – 1/8 teaspoon
Black pepper – 1/8 teaspoon
Bay leaf – 1
PREPARATION
1. Heat 1 teaspoon olive oil in a pan, add 1 teaspoon garlic and stir it until it
turns golden brown in color.
2. Add 70 grams chopped onions, fry till translucent or until it turns golden
brown in color.
3. Add 200 milliliters vegetable stock, 250 millilitres water, 300 grams
mushrooms, 40 grams small pieces of broccoli, 60 grams small pieces of
zucchini and mix it well.
4. Add 1 teaspoon soy sauce, 1/8 teaspoon dried thyme, 1/8 teaspoon
oregano and mix it well.
5. Now add 1/8 teaspoon salt, 1/8 teaspoon black pepper, 1 bay leaf and mix it
well.
6. Cover with lid and cook it for 12-18 minutes.
7. open lid and remove bay leaf now.
8. Stir it well and remove it from heat.
9. Serve hot.
