Makes 8-10 dumplings:
Vegetables
– 2 cup cabbage, grated
– 1/2 cup chopped spring onion
– 1 carrot grated
– 2 cups chopped mushrooms
– 150g firm tofu, grated
Sauce
– 4 tablespoons smooth peanut butter
– 1/4 cup soy sauce or tamari
– 1 tablespoon sriracha or to taste
– 2 tablespoons maple syrup
– 1 tablespoon lemon juice
– 1 teaspoon sesame oil
– 10 rice paper sheets
– sesame seeds and chili flakes, for coating
