This spicy breakfast scramble is fantastic for meal prep, heats up very nicely in the microwave, and with the spicy sausage it will be a nice way to wake up without cooking every morning for a week! This recipe is for 5 meals, follow along and enjoy!
Grocery List:
10 eggs
1lb spicy ground sausage
1 red bell pepper (diced)
1 green bell pepper (diced)
1 small to medium sweet onion (also diced)
Butter
Avocado Oil
Garlic (paste, powder, or minced – I like the paste)
Salt and Pepper
Sour Cream
Monterey Jack Cheese
Recipe:
1) Start out by sauteing your onion in a medium-high pan with oil and butter, adding 2 cloves worth of garlic paste, or 2 cloves of garlic, or about 2tsp of garlic powder
2) Once onions are 85-90 percent done add your peppers and mix together
3) Start browning your sausage in a separate pan
4) Go ahead and prepare your eggs in a bowl – scramble them with your favorite device (I like a fork)
5) Once your sausage is about 95 percent done add your onions and pepper to the sausage pan and stir together
6) Stir in beaten eggs and stir continuously (this will make the eggs fluffy)
7) Add salt and pepper to taste (start with about 2 tbs of salt and pepper)
8) Once eggs look to be almost done take off heat and add sour cream (about 2-3 tbs) return to heat and stir stir stir!
9) Once everything is the consistency you like, take off heat, serve or divide into meals for later in your favorite dish! (I like my Pyrex)
