Best of all: you can use whatever veggies you have on hand and add any seasonings to your liking. This recipe features broccoli and cherry tomatoes.
🛒 Ingredients:
– 1 7-ounce block feta cheese
– 1 12-ounce package frozen broccoli
– 1 10-ounce package cherry tomatoes (or any other veggies you prefer)
– 4 chicken breasts
– Garlic powder, salt, and pepper to taste
– A drizzle of olive oil
– 1 12-ounce package cauliflower rice
– Fresh basil to taste
👩🍳 Instructions:
– Preheat your oven to 400 degrees Fahrenheit.
– Place the block of feta cheese, broccoli, and cherry tomatoes (or whatever veggies you have on hand) in a casserole dish.
– Add the chicken breasts.
– Sprinkle with garlic powder, salt, and pepper to taste, and then drizzle with olive oil.
– Place the dish in the oven for 30 minutes.
– Remove the pan, then remove the chicken from the pan and slice it.
– Mix the feta and veggies together in the dish.
– Add the cauliflower rice and basil.
– Then place the sliced chicken back in the casserole dish.
– Enjoy!
