PLT Sandwich Recipe:
For Pesto
Basil – 2.5 Cup
Olive Oil – ½ Cup
Cashews – ¼ cup
Garlic – 2 nos
Parmesan – ½ Cup
Salt – ¼ tsp

Other Ingredients
Paneer – 150g
Chaat Masala – ¼ tsp
Salt – ¼ tsp
Butter – 1 tbsp
Bread – 2 Nos
Tomato – 1 No
Lettuce – 3 Leaves (10g)
Onion (sliced) – ½ No

Instructions:
1. For the pesto, add all the ingredients except the cheese and blend.
2. Once a rough paste has formed, add the cheese and blend until incorporated. The paste should not be completely smooth
3. For the sandwich, cut slices of paneer and toast them in a pan until deeply golden on both sides
4. In the same pan, toast two slices of bread in a pan with butter on both sides.
5. Spread pesto on both the bread slices. Then add a layer of lettuce, followed by sliced tomato, and finally, the paneer.
6. Close your sandwich and use toothpicks to keep it stable
