Layered Chia Protein Pudding

Vanilla layer

1 ½ cups plant milk
4 pitted medjool dates
7 tbls chia
4 tbls hemp seeds
2 tsp vanilla

Raspberry layer

1 cup plant milk
3 pitted medjool dates
4 tbls ground chia
2 tbls hemp seeds
½ tsp vanilla bean powder or 1 tsp vanilla extract
1/2 cup frozen raspberries

Chocolate layer

1 ½ cups plant milk
5 pitted medjool dates
6 tbls ground Chia
4 tbls hemp seeds
4 tbls cocoa powder

* For those with diabetic considerations or who want to limit their sugar intake, you could reduce the amount of dates.

This recipe makes approximately 4 cups. Amount will vary depending on the size of cup or bowl you use.

Each serving will contain approximately 18-20g protein (based on dividing this recipe into 4 servings)

Grind Chia seeds in a seed grinder. Combine all ingredients in a high-speed blender. Pour vanilla layer into desired cup or bowl.

Allow vanilla layer to set for 10-20 in the refrigerator and add raspberry layer.

Allow raspberry layer to set in the refrigerator for 10-20 minutes and add the chocolate layer.

Refrigerate for 1 hour. Top with pomegranate or other fruit of choice.. Enjoy!
