Gajar ka Halwa
Serves 5-6
Recipe in English:

Ingredients:
-Gajar (Carrots) 1 kg
-Desi ghee 1 tsp
-Kaju (Cashew nuts) 2-3 tbs
-Badam (Almonds) 2-3 tbs
-Doodh (Milk) ½ litre
-Desi ghee 2-3 tbs
-Jaifil powder (Nutmeg powder) 1/4 tsp
-Elaichi powder (Cardamom powder) 1 tsp
-Canderel 2 & ½ tbs
-Khoya 2-3 tbs

Directions:
-Grate carrots (thick & long shreds) with the help of the garter & set aside.
-In wok,add desi ghee and let it melt,add cashew nuts,almonds and fry for 1 minute & set aside for later use.
-In wok,add carrots and milk,mix well and cook on medium low flame for 18-20 minutes and keep mixing in between.
-Add desi ghee,mix well and cook on low flame for 6-8 minutes and keep mixing in between.
-Add nutmeg powder,cardamom powder and mix well.
-Add half quantity of fried nuts (reserved for garnishing) and mix well.
-Add canderel and mix well.
-Turn off the flame,add khoya and give it a good mix.
-Garnish with khoya,dru nuts & serve!

Ajza:
-Gajar (Carrots) 1 kg

Directions:
-Gajar ko garter ki madad sa grate ker lein (thick & long shreds) & side per rakh dein.
-Karhai mein desi ghee dal ker melt karein,kaju aur badam dal ker 1 minute kliya fry ker lein & bad mein use kernay kliya side per rakh dein.
-Karhai mein gajar aur doodh dal ker ache tarhan mix karein aur darmiyani halki ancch per 18-20 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein.
-Desi ghee dal ker ache tarhan mix karein aur halki ancch per 6-8 minutes kliya paka lein aur aur bech bech mein chamcha chalatay rahein.
-Jaifil powder aur elaichi powder dal ker ache tarhan mix karein.
-Fried nuts ki half quantity dal ker ache tarhan mix karein aur baqi ko garnishing kliya reserve ker lein.
-Canderel dal ker ache tarhan mix karein.
-Chulha bund ker dein aur khoya dal ker mix ker lein.
-Khoya aur dry nuts sa garnish ker ka serve karein!
