Ingredients:
– 1 cup boiled chickpeas
– 1 cup roasted beets
– 2 teaspoons cumin
– 1/2 lemon, juiced
– 3 tablespoons olive oil
– 1 teaspoon salt
– 2 Garlic clove
– Some water
Instructions:
– In a food processor, combine the chickpeas, beets, lemon juice, olive oil, salt, cumin, and garlic.
– Blend until smooth and creamy and/or add some water.
– Serve with vegetables, pita bread, or crackers.
Tips:
– Roast the beets before blending them to give them a deeper flavor.
– You can add tahini, peanut butter, or almond butter.
– Add more or less lemon juice to taste.
– Garnish with chopped parsley or mint.
