This simple and healthy roastef eggplant recipe is pefect for weight loss. It is not only healthy food but also very tasty. Recipe like the roasted eggplant will be ones you will want to make again and again.

Ingredients:

Eggplants (1)
Olive oil (2 tbsp)
Salt

The Basil oil:
Olive oil
Basil leaves

The Yogurt Dip:
Greek yogurt (1cup)
Salt
Lemon juice ((½ tsp)
Olive oil (1 tbsp)
Fresh dill

Instructions:

Wash and dry eggplant. Cut it in half, add salt and oil it with a olive oil. Bake it in a preheated oven 400°F/200°C for about 40-45 minutes.
In a bowl mix the olive oil, basil and salt. Brush the basil oil. In another bowl mix the ingredients for the yogurt dip to serve on the side.
