Fast Like a Girl by Dr Mindy Pelz
Walking Pad Treadmill:

RECIPES

Pot Roast:
3-4 lb chuck roast
Salt to taste
2 T avocado oil
2 packet brown gravy
1 packet ranch seasoning
1 T onion powder
1-2 t garlic powder
2 c beef broth
2 medium yellow onions, quartered
2 lbs carrots, cut in chunks
3-4 lbs potatoes, cut in chunks

Preheat oven to 325 degrees.
In a cast iron dutch oven, heat oil. Sprinkle roast with salt on all sides. Add roast to preheated cast iron and brown on all sides, about 4-5 minutes per side.
Sprinkle season packets and seasonings over roast, pour broth over roast, and add cut up veggies all around roast.
Cover and slow cook in oven about 4-5 hours until done.

Chicken Curry:
3 chicken breasts, cut in half to even thickness

marinade:
½ c plain greek yogurt
Salt and Pepper to taste
1 T onion powder
1 t garlic powder
1 t paprika

2 T avocado oil, divided
1 large yellow onion, diced
1 red bell pepper, diced
1 c chicken broth
1 t ginger
1 ½ t garlic
3 T red curry paste
1 can coconut milk
1 T lime juice
1 ½ t sugar or sweetener of choice

Coat the chicken in the marinade and let rest in the fridge for about 15 minutes. Chop all veggies.
Heat 1 T oil in large skillet. Cook chicken both sides until browned. Remove chicken and set aside.
Add additional oil to skillet if needed, add diced veggies and cook until soften.
Add remaining ingredients and bring to simmer, add chicken to sauce. Simmer about 5-10 minutes or until done.
Serve over rice or cauliflower rice.

Monster Meatballs:
2 lbs ground turkey
2 c spinach leaves
2 large eggs
1 T onion powder
1 t italian seasoning
1 ½ garlic powder
Salt to taste
½ c pecorino cheese grated

Preheat oven to 425 degrees.
Add ground turkey to a large mixing bowl.
Blend together spinach, eggs, and onion powder, add to bowl.
Add the rest of the ingredients to the bowl and combine.
Divide into 20-24 meatballs. Bake for about 15 minutes until done.

Serve with your favorite sauce and pasta or rice.
