Vangi Bath (brinjal rice), a light spicy rice dish made with sauteed bell pepper, zucchini & Eggplant is a delicious rice recipe from South Indian cuisine that is simple and easy to cook at home. It is very easy to make & barely takes 10 to 15 mins if you have the cooked rice ready. Vangi bath is very popular among the vegetarian community and is made without onion & garlic.

vangi bhath and raita are one of the best option for lunch box, picnics, trips, potlucks… Vangi Bath (Kannada: ವಾಂಗಿ ಬಾತ್) is a South Indian dish that originated in Karnataka.
It is particularly popular in Karnataka, Andhra Pradesh, Tamil Nadu and Maharashtra where Vangi means brinjal/baingan/eggplant and Bath/Bhath/Bhat means rice in local language.Vangi Bath goes with Morucurry or Mosaru Bajji or Raita.
Vangi Bath Recipe/Brinjal or Eggplant Rice/Kathirikkai Sadham/Rice Meal (non malayalee viewers, please use subtitles)
Heat 1 Tbsp oil (I used coconut oil). Add 1 tsp mustard seeds, let it splutter. Add 1 tbsp split chana dal. Add splitted red chillies and curry leaves. Add chopped vegetables (I used 1/2 of a bell pepper, 1/2 of a Zucchini, 1/2 of an eggplant). Add 1 tsp turmeric powder. Add 1 tbsp vangi bath Masala. Add 1/2 tsp salt. Cover it and cook for 2-3 minutes. Soak little tamarind, remove the skin and add the pulp to the vegetable mix. Cover it and cook for another 2-3 minutes. Add 1 tsp brown sugar or Jaggery and mix well. Add 3 cups of cooked rice and mix well. You can add nuts, dried fruits and Ghee for better taste. Enjoy with Raita, chips and pickle.
