Hi Everyone! I have some healthy meal prep ideas for you! I also am including some family dinner ideas by making my meal prep easy and doubling family dinner to pack up for quick meal prep. I have some vegetarian and meat options, plus everything is gluten free! I hope this gives you some meal prep motivation!

Taco Soup (this is my version of a lightened up Crack Chicken Soup)
1lb Chicken
1/2 Medium Onion diced (I used red)
1 c. Corn
1 Can Black Beans (15oz) (rinsed)
1 Can Diced Tomatoes (15oz)
6 Cups Chicken Stock
1 tsp. Cumin
1 Tbs. Chili Powder
1 tsp. Garlic Powder
1 tsp. Salt
2.5 tsp. Ranch Seasoning
1/4 tsp. Pepper
4 oz. Light Cream Cheese
1-2 Big Handfuls of Spinach
Shredded Cheddar Cheese
Combine all ingredients but the cream cheese, spinach and cheese. Cook on pressure level High for 20 minutes. If you can, let it do a natural release (mine took about 20 minutes). Remove chicken and shred. Add Spinach. I just tear it up, but you could leave it whole or chop it. Add cream cheese. (I pull pieces off with my hands to help it to incorporate better). Whisk until there are no large chunks left. Add Chicken back in. Stir to combine. You can add cheese into the whole soup, but I prefer to add it to the top after portioning.
Additional Toppings:
Sour cream or plain yogurt
Avocado
Cotija Cheese
Salsa
Corn Chips
Fresh Lime Juice
Roasted Sweet Potatoes
3 Large Sweet Potatoes cubed
Avocado Oil
Salt and Pepper
Preheat oven to 425F. Chop sweet potatoes and place on parchment lined baking sheet. Add oil. I use a spray, but approx. 2Tbs of your choice of oil would work. Salt and Pepper to taste. Combine. Roast for 15-25 minutes. It really depends on your oven and “done-ness” preference. I check it 10 minutes to stir and see how soft they are getting, then add 5 minutes at a time until done.
