Rava Dosa

To Make Rava Dosa

Rice Flour – 1 Cup
Semolina / Rava – 1/4 Cup
Maida – 1/4 Cup
Salt – 1/2 Tsp
Asafoetida Powder – 1/4 Tsp
Onion – 1 No.
Green Chilli – 1 No.
Chopped Ginger
Cumin Seeds – 1/2 Tsp
Peppercorns – 1/2 Tsp
Curd – 2 Tbsp
Water
Oil

Method:

1. Take riceflour, sooji rava, maida, salt and asafoetida in a large bowl.
2. Mix it all well.
3. Add chopped onions, green chillies, ginger, cumin seeds, peppercorns and curry leaves to the flour mixture.
4. Mix it all well again and add fresh curd.
5. Gradually add water to the mixture and bring it to a watery buttermilk consistency.
6. Check for seasoning and add salt if required. Let the batter sit for about 30 mins.
7. Spread some oil on the tawa and heat it.
8. Mix the batter well and pour it with a ladle on the tawa as shown in the video, do not spread the batter.
9. Apply oil to the sides of the dosa and in the center.
10. Let the dosa cook for about 10 mins on a medium low flame on one side.
11. Fold the dosa into half and transfer it to a plate as there’s no need for it to be cooked on the other side.
12. Crispy, hot Rava Dosas are ready to be served hot and nice with any chutney of your choice or sambar by the side.

Idli Podi

To Make Idli Podi

Oil – 2 1/2 Tsp
Chana Dal – 1/2 Cup
Urad Dal – 1/4 Cup
Peanut – 1/4 Cup
Roasted Chana Dal – 1/4 Cup
Red Chilli – 10 Nos
Kashmiri Red Chilli – 10 Nos
Grated Coconut – 1 Cup
Garlic Cloves
Few Tamarind
Rock Salt – 1 1/2 Tsp
Asafoetida Powder – 1/2 Tsp
Sugar – 1 Tsp

Method:

1. Take gingelly oil in a pan and add chana dal and urad dal.
2. Roast them for about a minute and then add peanuts. Roast them until they are golden brown in colour.
3. Add roasted chana dal and roast for 2 mins. Remove them from the pan and cool them down.
4. To the same pan, add gingelly oil again and drop in the red chillies along with Kashmiri red chillies. Roast until they change in colour and remove them from the pan.
5. Take oil in the same pan again and add grated coconut, garlic cloves and tamarind bits.
6. Roast until they are all golden brown in colour and then remove them from the pan.
7. Put in the roasted red chillies in a mixer jar and grind them into a fine powder.
8. Then add in the roasted dal mixture in two instalments and keep grinding to make sure they are all well blended.
9. Lastly, add in the coconut mixture, rock salt, asafoetida powder and sugar. Grind it all into a fine powder.
10. Tasty and flavourful Idli podi is ready to be served with hot idlies and ghee.

Rava Khichdi

To Make Rava Kichadi

Sooji / Rava – 1/2 Cup
Oil – 2 Tbsp
Chana Dal – 1 Tsp
Urad Dal – 1 Tsp
Mustard Seeds – 1/2 Tsp
Cumin Seeds – 1/2 Tsp
Cashew Nuts
Curry Leaves
Onion – 1 No.
Green Chilli – 1 No.
Beans – 2 Tbsp
Carrot – 2 Tbsp
Cooked Green Peas
Tomato – 1 No.
Turmeric Powder
Salt – 1 Tsp
Hot Water – 1 Cup
Ghee – 3 Tsp
Coriander Leaves

Method:

1. Roast the sooji ravva until it is golden brown in colour and keep it aside.
2. Take oil in a pan and add chana dal, urad dal, mustard seeds, cumin seeds and cashewnuts.
3. Add the curry leaves, onions, ginger, green chillies and cook until the onions are transparent.
4. Then add in beans, carrots, green peas, tomatoes and mix well. Add salt and turmeric powder.
5. Mix well and once the veggies are no more raw, add in the roasted sooji rava and roast for another 3-4 mins.
6. Add hot water and mix. Cover the pan with a lid and cook the khichdi for 5 mins.
7. Finally add ghee and coriander leaves. Mix it all again.
8. Simple yet tasty Rava Khichdi is ready to be served hot with coconut chutney by the side.

Oats Dosa

To Make Oats Dosa

Rolled Oats – 1 Cup
Onion – 1 No.
Green Chilli – 3 Nos
Ginger
Rock Salt – 1/2 Tsp
Cumin Seeds – 1/2 Tsp
Asafoetida Powder
A Piece Of Turmeric Powder
Ghee

Method:

1. Take rolled oats in a bowl and add water to it. Soak the oats for 30 mins.
2. After 30 mins, put the soaked oats in a mixer jar.
3. Add onions, green chillies, ginger, cumin seeds, salt, turmeric powder and asafoetida to the mixer jar.
4. Grind it all well without adding water.
5. Remove the batter from the mixer jar and add a little water if it is too thick.
6. Heat a pan, take a ladle of the batter to make the dosa like a pancake as shown in the video.
7. Apply ghee on the sides for added crispiness and flavour.
8. Once the dosa is cooked on both the sides, remove it from the pan and serve it hot with some spicy tomato chutney or any other chutney of your choice.
