I wanted a quick, easy and healthy gluten-free vegan dinner. This is how I came up with this gluten-free and vegan pasta recipe with simple ingredients, with vegetables. The homemade pasta sauce consists of only 3 ingredients, onions, peas and carrots. It made a delicious and healthy dinner. The pasta sauce can be eaten with rice, couscous, millet or anything else. An excellent idea for the next day in the gluten-free vegan pasta for lunch box.

RECIPE:
1 onion
1 cup of peas
1 cup of carrots ( frozen baby carrots or 1 chopped carrots )
2 tablespoons oil
1 tsp parsley
1 tsp marjoram
salt
I start sauteing the chopped onion in the oil. After a few minutes, I add the peas and carrots. Then I add the spices and half a cup of water. When the carrots are soft, I blend the whole thing with a little water. I serve this vegetable sauce with the cooked pasta. But you can also eat it with rice, couscous, cologne or anything else. It’s also good as a lunch box the next day. Enjoy!
