Dal Coconut Curry
Ingredients:
5 tbsp dal (red lentil)
1/2 medium sized onion, sliced
2 green chilli, sliced
1/4 tbsp turmeric powder
4 tbsp grated coconut (or use sliced coconut)
2 shallots
1/2 tbsp mustard seeds
Curry leaves
Dried red chilli
Salt to taste

Recipe:
Cook the dal with onion, chilli, turmeric powder and salt. Grind the coconut, shallots with some water and make it a paste. Add the coconut milk into the cooked dal and mix well. Heat oil in a wok and add the mustard seeds. When it splutters, add the curry leaves and red chilli. Pour that into the dal and mix again. Serve with rice or chapati.

Okra Stir-fry
Ingredients:
250g Okra
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
1/2 medium sized onion, sliced
2 garlic cloves, sliced
1/2 medium sized tomato, sliced
2 green chilli, sliced
Curry leaves, chopped
1/4 tbsp turmeric powder
4 tbsp grated coconut
Salt to taste

Recipe:
Heat oil in a pan and splutter the mustard and fenugreek. Add the onion, garlic, tomato, chilli and saute well. When it’s cooked add the chopped okra, turmeric powder and salt. Cook it covered and when it’s done, add the coconut. Mix well and cook for 1-2 minutes. Serve with rice or chapati.

I packed these with chapati and some fresh sliced oranges. Enjoyy!
