welcome to my first vlog in my new home!!!! this was so fun to film and even though we are currently living out of boxes and bags, I’m loving it. It’s definitely making my fitness routine harder to stick to because I’m so busy with everything, but that is OK! not every week is going to be 100%. Ingredients for air fryer gnocchi is below. enjoy! Ells xxx
AIR FRYER PESTO GNOCCHI:
200g chicken breast
20g parmesan
1 pack of gnocchi
40g low fat cream cheese
1/2 red onion
30g green pesto
2 slices of proscuitto
200ml skimmed milk
1 tbsp paprika
20g grated mozzarella (forgot to mention!)
Method:
1. season chicken breast, cover in foil and air fry for 15 mins
2. To a bowl add the milk, pesto, cream cheese, parmesan, salt/pepper and mix well
3. boil the gnocchi until soft (i didn’t do this and should have!)
4. take chicken out and tip into air fryer dish. Mix with the sauce then top with the mozzarella.
5. air fry at 180 degrees C for 15 mins, take out & top with the proscuitto slices and cook for 3 more mins
6. Divide into 2 portions!
