Healthy pumpkin bread
* 1.5 cups oats, blended into flour 
* 1 cup pumpkin puree
* 1/2 cup brown sugar (or coconut sugar)
* 2 eggs
* 1/4 cup coconut oil, melted
* 1 tbsp pumpkin spice
* 1 tsp baking powder
* For frosting: 1/2 cup vegan cream cheese + 1/2 cup powdered sugar 

Directions:
1. Preheat oven to 350F / 180C and line a loaf pan with parchment paper 
2. Mix all ingredients in a bowl, transfer to loaf pann
3. Bake for approximately 45-50 mins, until top is golden
4. Allow bread to cool completely. In meantime, prepare vegan cream cheese, spread on cooled bread, sprinkle with cinnamon and enjoy! 🙂
