Oats Upma
Ingredients:
– Rolled Oats (1/3 cup)
– Oil (1 tbsp)
– Mustard Seeds (1/2 tsp)
– Urad dal (1/2 tsp)
– Broken Cashews (few)
– Green Chilli (1)
– Few Curry Leaves
– Onion (half)
– Carrot (diced)
– Green Peas
– Grated Coconut (2 tsp)
– Turmeric powder (1/4 tsp)
– Water (2/3 cup)
Method:
STEP 1:
Roast the oats in a pan on low to medium heat till its color gets changed to golden brown. After roasting transfer it to a bowl.
STEP 2:
In the same pan heat oil. Add in mustard seeds and once they start to crackle put in urad dal. As soon as the urad dal changes color add in onion and fry. Now add in green chilli, curry leaves and cashews and cook them all. Add in the carrot, green peas and cook again. Put in turmeric powder and salt. Now add freshly grated coconut and mix everything well.
STEP 3:
Pour in water and allow it to boil. Once it gets boil add in the roasted oats and give it a good mix. Now cover the pan and cook for 3-5 minutes on low heat or until the water gets absorbed. Once water had been absorbed open the lid of the pan and cook for 1 minute again on low heat. Oats upma is ready. Serve hot.
Notes:
1) Roast the oats very carefully by continuously stirring in between as changes color very easily and gets burnt soon. Never roast on high heat.
2) Any vegetables can be added of your choice to the upma. Your can replace cashews by raw peanuts.
