HEALTHY but DELICIOUS Snacks│Healthy PROTEIN Snack IDEAS

Today I am sharing the second edition of my 3 healthy but delicious snacks. These recipes are PERFECT for MEAL PREP! I know what its like to be super busy – barely having time to get ready for work, let alone grabbing healthy snacks. These recipes are perfect for any time of day! They also make a great breakfast option – filled with protein and fiber – they will satisfy you and keep you full longer. The chocolate cherry energy bites and double chocolate breakfast cookies are VEGAN (be sure to use vegan protein powder). I store all three of these in the freezer. Just grab a couple in the morning when you’re heading out the door! Let me know which recipe is your favorite ❀

✴✴CHOCOLATE TRUFFLE PROTEIN MUFFINS✴✴

INGREDIENTS:
1 cup Almond Flour
1 cup Sprouted Rolled Oats
½ cup Cacao Powder
½ cup Hemp Hearts
½ cup Chia Seeds
½ cup Chocolate Protein Powder (I’m using Iconic)
¼ cup Coconut Sugar
½ teaspoon Pink Salt
2 teaspoons Cinnamon
1 Large Egg (or flax egg)
¾ cup Almond Milk (unsweetened)
2 teaspoons Maple Syrup
1 teaspoon Vanilla Extract
½ tablespoons Baking Powder

INSTRUCTIONS:
1. Preheat oven to 375F, In a large bowl, combine all dry ingredients (except baking powder) and set aside.
2. In another mixing bowl, combine egg (or substitute), maple syrup, vanilla, and almond milk. Whisk well.
3. Add the wet to the dry ingredients. Mix well. Add baking powder. Lightly mix.
4. Using either silicone molds or parchment baking cups, add ¼ a cup of mixture to each cup. Bake for 15-22 min until toothpick comes out clean. Store in fridge or freezer. Warm up in toaster or microwave.

✴✴CHOCOLATE CHERRY ENERGY BITES✴✴

INGREDIENTS:
½ cup Raw Cashews
1 cup Filtered Water
¼ cup Dried Cherries
¾ cup Almond Milk (unsweetened)
1 teaspoon Vanilla Paste (or Vanilla Extract)
7 Medjool Dates
½ cup Hemp Hearts
1 cup Chocolate Protein Powder
1 cup Sprouted Rolled Oats
½ cup Cacao Powder
1 teaspoon Refined Coconut Oil (melted)
¼ cup coconut (optional)
¼ cup cacao nibs (optional)

INSTRUCTIONS:
1. Soak cashews in filtered water for 20 minutes. Drain and add to food processor with dried cherries. Pulse. Add ¼ cup almond milk and pulse. Add vanilla paste and pulse. Set aside.
2. Add dates to wiped out food processor and pulse into a paste. Add the remaining ingredients and pulse. Transfer to a large bowl. Using your hands (FUN!) thoroughly mix dough together.
3. Using a teaspoon or cookie scoop, scoop up mixture, roll into a ball, and making a hole in the center, stuff with cherry mixture and re-roll into a ball. Another option is to just dip the ball into cherry mixture and top with cacao nibs or coconut. Do this for all the balls. Place in freezer and store in freezer.

✴✴DOUBLE CHOCOLATE BREAKFAST COOKIES✴✴

INGREDIENTS:
1 tablespoon Ground Flax
3 Tablespoons Filtered Water
1 cup Almond Flour
1 cup Quick Cooking Sprouted Oats
½ cup Hemp Hearts
½ cup Cacao Powder
1 cup Chocolate Protein Powder
½ teaspoon Pink Salt
1 teaspoon Baking Soda
1 teaspoon Baking Powder
¼ Coconut Sugar
1 teaspoon Vanilla Extract
¼ cup Almond Milk (unsweetened)
¼ cup Refined Coconut Oil (melted)
2 tablespoons Almond Milk (unsweetened)
¼ cup Chocolate Chips

INSTRUCTIONS:
1. Preheat oven to 375F. Combine flax and water and set aside. In a large mixing bowl, combine all dry ingredients except coconut sugar and set aside.
2. In another mixing bowl, add flax egg (or regular egg) and whisk. Add coconut sugar and whisk. Add vanilla and almond milk and whisk. Add the wet to the dry ingredients. Mix (use your hands its FUN!).
3. On a silicone or parchment lined baking sheet, shape 1-2 teaspoons of dough into cookie shape. Do this for all the dough. Flatten cookies and top with 3 chocolate chips. Bake for 10-15 minutes. Store in the freezer.
