Ingredients:
1 block of firm tofu, pressed and cubed
2 cups of mixed stir-fry vegetables (bell peppers, snow peas, carrots, etc.)
3 tablespoons of soy sauce or teriyaki sauce
1 tablespoon of vegetable oil
1 teaspoon of ginger, minced
2 green onions, chopped
Cooked rice or noodles
Instructions
Heat vegetable oil in a pan over medium-high heat.
Add cubed tofu and cook until golden brown on all sides. Remove from the pan and set aside.
In the same pan, add minced ginger and stir-fry for about 1 minute.
Add the mixed vegetables and sauté for 3-4 minutes until they start to soften.
Return the tofu to the pan and pour in soy sauce or teriyaki sauce. Stir-fry for an additional 2 minutes.
Garnish with chopped green onions and serve over cooked rice or noodles.
