Recipes –
Broccoli Slaw & Regular Slaw– I make them both the same. I add dried cranberries and bacon to the broccoli slaw
Cole Slaw
Mayo
Lemon Juice to taste
Sweetener to taste
Cooked apples –
Quarter apples and put in roaster
A bottle of spray butter or a stick or 2 of regular
Sweetener
Cook on high til bubbling
Cover and simmer until tender (I think 45 min)
For dessert, I top these with Cool Whip
Fudge –
1/2 Stick Butter
1 Can Eagle Brand
3 Cups Chocolate Chips
Chunky Chef’s Bean & Meat Casserole
INGREDIENTS
o 2 Tbsp olive oil
o 2 lbs. ground beef (I usually use 80/20)
o 2 medium yellow onions, peeled and diced
o 2 jalapeno peppers, seeded and finely diced
o 5 cloves garlic, minced
o 2 pkg taco seasoning
o 1 – 2 (15 oz each) cans black beans, drained and rinsed
o 2 (4 oz each) cans diced green chiles, drained
o 1 tsp kosher salt
o 1/2 tsp black pepper
o 5 Tbsp tomato paste
o 2 (16 oz each) jars picante sauce or salsa
o 3 cups Mexican blend shredded cheese, divided
INSTRUCTIONS
1. Preheat oven to 350 F degrees. Spray a 9×13 or 3 quart baking dish with nonstick spray and set aside.
2. Heat a large, deep skillet over medium high heat and add olive oil. Add ground beef and cook, crumbling with a wooden spoon or potato masher, until browned and mostly cooked, about 4-5 minutes.
3. Add onion and jalapeno to beef. Cook, stirring often, until softened and fragrant, about 4 minutes. Add garlic and cook about 1 minute. Beef should be fully cooked and brown at this point.
4. Drain any fat and return to skillet. Stir in taco seasoning, black beans, green chiles, salt, pepper, tomato paste and picante sauce. Cook 1-2 minutes.
5. Set skillet aside and add 1 1/2 cups of shredded cheese.
6. Transfer beef mixture to prepared baking dish and top with remaining 1 1/2 cups of cheese.
7. Bake approximately 25 minutes, until hot and bubbly and cheese is melted. Top with desired toppings and serve!
Taco Soup –
1-2 lbs Cooked Hamburger meat – It calls for 1 but I put 2 to make it meatier.
Add the following –
1 can Rotel
1 can Ranch Style Beans
1 can Pintos
1 can Corn (drained)
1 can Diced Petite Tomatoes
1 pkt Taco Seasoning
Ranch Dressing Packet
(To make it soupier, add a cup of water)
Chicken Salad-
Stew chicken
Add Mayo
Bread & Butter pickle juice to taste
sweetener to taste
Every time I eat it I decide if I want to add some apple, cranberries, seeds or nuts, etc. But I keep naked chicken salad in the fridge most of the time.
Eggroll in a Bowl
Cabbage – I use Cole Slaw
Melt butter and sautee Cabbage until firmness you want
I spice with SeaSalt, garlic, and a little ginger (sometimes)
Top with hamburger or any meat you like
I eat with sweet n sour, soy sauce, coconut aminos, etc…
Keto Sausage Balls
1 Lb Sausage
1 Egg
1 C. Almond Flour
8 Oz Cheddar Cheese
2 tsp Baking Powder
Heat oven to 350.
Combine all ingredients in large bowl. Mix well.
Form balls into 1 ½ -2 Tbs in size
Bake for 18-20 minutes until slightly browned. Remove to wire rack to cool slightly
Banana Bread
2 Cups all-purpose flour (You can sub Almond Flour)
1 tsp baking soda
¼ tsp salt
½ c butter
¾ c brown sugar
2 eggs
2 1/3 c mashed overripe bananas
Directions –
1 Preheat oven to 350 degrees F. Lightly grease 9×5 inch loaf pan
2 Combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir to moisten. Pour batter into loaf pan
3 Bake for 60-65 min. until a toothpick comes out clean.
