Ingredients:
6 cups water
1 boneless chicken breast
1 tsp salt
1 large carrot, cut into half-moon shapes
1¼ cups cabbage, chopped
1 tbsp cooking oil
1 large onion, chopped
4 medium garlic cloves, smashed and sliced
4 cardamom pods, bruised
2-3 green chilies, chopped
2½ tsp coriander powder
3 tbsp water (additional)
2 small tomatoes, cut into wedges
3 tbsp coriander, chopped
¼ tsp + a pinch of ground black pepper
½ lime, juiced
Instructions:
In a large pot, add 6 cups of water, chicken breast, and 1 tsp of salt. Cook covered for 15 minutes or until the chicken is fully cooked.
Remove the chicken, shred it using two forks, and set aside.
Skim any scum from the surface of the water in the pot.
Add the carrots and cabbage to the pot, cover, and cook on low heat.
In a separate pan, heat 1 tbsp of oil. Add the onion and a pinch of salt, sautéing until the onion changes color.
Add the garlic, cardamom pods, and green chilies. Cook until the onions and garlic are light brown.
Stir in the coriander powder, then add 3 tbsp of water to prevent the spices from burning.
Add this onion mixture to the soup pot and mix well.
Add the tomato wedges, shredded chicken, chopped coriander, and black pepper to the soup. Adjust seasoning as needed.
Cover and bring to a boil. Once boiling, turn off the heat.
Open the lid, add the lime juice, and serve hot.
