To Make Dough

Wheat Flour – 3 Cups (Buy:

To Make Sattu Mixture

Roasted Gram Flour – 1 1/2 Cups
Onion – 2 Nos
Ginger – 3 Tsp
Garlic – 3 Tsp
Green Chilli – 3 Nos
Salt – 1 Tsp (Buy:
Kalonji Seeds (Buy: )
Ajwain – 1 Tsp (Buy:
Mango Pickle – 2 Tsp
Mustard Oil – 3 Tsp
Coriander Leaves
Juice Of 1/2 Lemon

METHOD:

1. Take wheat flour, salt, ajwain and kalonji seeds in a large bowl.
2. Mix well. Add water gradually and prepare the dough.
3. Knead the dough for 5 mins and then cover it. Let it sit aside.
4. For the filling, take roasted gram flour, chopped onions, chopped ginger, garlic, green chillies, kalonji/nigella seeds, carom seeds, mango pickle, mustard oil,c hopped coriander leaves, lemon juice in a bowl and mix well.
5. After the dough is rested for 20-30 minutes, divide it into equal portions.
6. Prepare each dough ball into a cup as shown in the video and stuff the filling in it.
7. Now seal the filling with dough all around, make it into a ball again.
8. Place this dough ball on a rolling surface, dust some flour and roll it out evenly, gently into a slightly thick paratha.
9. Prepare all the parathas in the similar manner.
10. Heat a tawa and place the paratha on it. Keep flipping on both sides and cook the parathas.
11. Apply some ghee on the parathas after the brown spots appear.
12. Remove the paratha from the pan once it cooked well on both sides.
13. Yummy Bihari sattu paratha is ready to be served hot with some curd and salad by the side.

Sattu Paratha is a famous North Indian bread recipe which has a delicious filling made with Besan/Gram Flour. Along with gram flour, the filling has nice seasonings and condiments to add more taste. This sattu paratha can be had as it is or it can be enjoyed with raitha and some pickle by the side. This also makes a great lunchbox recipe.
