You can use mustard greens as a whole leaf or finely chop them, depending on your preference.

According to Dr. Clyde Wilson of Stanford University, including a good handful of mustard greens helps mitigate the blood sugar spike caused by bread.

INSTRUCTIONS

Basil Infused Mozzarella Sandwich, Mustard Greens and Nuts Ingredients: – 2 oz Basil Infused Mozzarella
– 1 Sourdough Roll
– 1 cup or 10 mustard greens
– 1 – 2 tablespoons dried unsweetened berries (like cranberries or cherries)
– 1 teaspoon olive oil
– pinch of salt
– pinch of pepper

Instructions:

1. Prepare the Basil Infused Mozzarella: – Start cutting the mozzarella with basil into thin slices. You can find pre-infused mozzarella in some grocery stores or make your own by layering fresh basil leaves between mozzarella slices and letting them sit for a few hours or overnight in the refrigerator.

2. Toast the sourdough bun: – Cut the sourdough bun in half horizontally and carefully remove some of the inside of the pan to create a hollow space. Toast until golden and crispy on the outside.

3. Prepare the mustard greens: – Wash and dry the mustard greens well. Sprinkle with a pinch of salt, pepper and good quality olive oil.

4. Assemble the sandwich: – Place the basil-infused mozzarella slices in even layers on the bottom half of the bun. – Sprinkle a handful of mustard leaves over the mozzarella. – Sprinkle dried berries (blueberries or cherries) over vegetables for a sweet and tangy contrast.

5. Place the top half of the toasted sourdough bun on top of the assembled ingredients to create a sandwich.

6. Serve and enjoy
