TOMATO SOUP WITH CRUNCHY WALNUT TOPPING (Exotic Soups Series)

Why put bread crumbs when you can top the soup with this amazing walnut basil topping. We normally have a sandwich or toast with soup so why add extra bread crumbs in the soup. Plus the breadcrumbs get soft immediately in the hot soup. Kind of defeats the purpose of putting the breadcrumbs in the soup and hence this innovation. Have used walnuts from chile which are season’s freshest walnuts at this time of the year.

And we have not just made plain tomato soup but given it red bell pepper twist as well. I hope you are counting all the health benefits with this scrumptious exotic soup.

Recipe –
Take
– 1 red bell pepper large size
– 5-6 large tomatoes
– 1 medium size onion
– 3-4 cloves garlic
– 2 tbs olive oil
– Salt & Pepper
– Mix everything well
– Roast it in oven at 200 degree for 20-25 minutes till you get charred effect
– You can do the same in air fryer also or roast it on a pan if no oven or air frier
– Once cools down, churn it in a mixer
– Strain the mixture
– Adjust the consistency with water
– Heat the soup once again
– For the toppings- take some basil leaves, roasted walnuts & some feta cheese (optional)
– Add this topping on the soup just before serving
