I love the combination of crisp raw cabbage, crunchy celery, juicy citrus and sweet currants in this light salad!
* 350g shredded white cabbage
* 1 large orange
* 100g chopped celery
* 3 tbsp currants
* 40ml orange juice
* 15g dill, chopped
* 2 tbsp poppy seeds
Dressing:
Juice of 1/2 orange
30ml olive oil
1 tbsp white wine vinegar
Salt & pepper
Cover the currants with orange juice and leave for 15-20 minutes to plump up (use the juice in dressing).
In a small bowl, whisk olive oil with the vinegar, orange juice and season with salt and pepper. Using a sharp knife, peel the orange, removing all of the bitter white pith and cut into segments. In a large bowl, toss the cabbage, orange, celery, dill, currants, poppy seeds and dill. Add the dressing and toss well.
